Flour Tortillas

4 cups flour
4 t. baking powder
1-1/2 tsp salt
4 T. vegetable shortening
1-1/2 c. warm water

Mix the flour, baking powder, and salt together. Cut shortening into flour mixture until thoroughly blended. Add water in small amounts mixing well after each addition. Knead dough until soft. It should be soft and pliable enough that it will stretch. Form the dough into small balls and roll in flour. Cover and let dough rest for a few minutes. With a rolling pin, roll on a floured board until the tortilla is about 8" in diameter. Cook on a hot griddle.

You can also use a tortilla press instead of rolling them.
